ProFlax Waffles

    I was looking for a high-protein, low-carb recipe I could use in the waffle maker, and came across this one, which fit my needs perfectly.

    2 egg whites
    2 tbsp flax seed
    1 scoop vanilla protein
    1 tsp baking powder
    1 tsp cinnamon
    1 packet splenda

    Mix all ingredients with wire whisk and pour into greased (I use vegetable oil spray) waffle maker and cook until done (according to manufacturer's directions).

    One Serving (two waffles as prepared in my machine):
    260 calories, 40g protein, 12g carbs, 8.5g fat

    These can be topped with any number of things... sugar-free syrup, natural peanut butter, fresh berries... use your imagination! Oh yeah... you can also freeze them and pop them in the toaster to reheat.

    Sounds tasty. Do you grind the flax seeds or are they mixed whole?

    I guess I should have been clearer... ground. In fact, whole flax seeds are un-digestible by humans.
