Slow Cooker Recipes?
Does anyone have any good slow cooker (crock pot) recipes? With my work schedule it's a great way to prepare meals.

For me the crock is all about chili. Now with my new diet i am going to remove the meat from it but I chop up green pepper onion, carots, cerlery, add a can of stewwed tomatoes, small can of tomatoe paste. some minced garlic. Garlic powder, chili peper, red pepper flakes. Then cook till everything is tender. I cook it over night about 12 hours.

Mexican Chicken
I'm working on getting some recipes together, also. Here's one that's really good:
Mexican Chicken
Ingredients
1 package boneless skinless chicken breasts (~2.5lb is good)
1 can Ro-Tel (tomatoes and green chilies)
1 tsp. chili powder
1 tsp. Oregano
1 tsp. Cumin
1 clove garlic chopped
1 tsp. dried minced onion
½ tsp. salt (or more to your taste)
¼ tsp. pepper
Directions:
1. Pour Ro-Tel into crockpot. Place chicken breasts on top of tomatoes and chilies. Sprinkle on seasonings.
2. Cook in crockpot (on high or low) until meat is tender and falls apart (about 5 - 7 hours on high or 10-12 hour on low).
It's good, especially with some hot salsa!

Maybe brown some ground turkey and add that to the pot, too? Just a suggestion...

well normaly I would get some lean stew beef, cut it up into little cubes and add it raw. However I am not sure how bad that would throw off the nutrition.

I think the main thing to watch out for with beef is the fat. Someone else may be able to help out a bit more here. If it's very lean, as most stew meats usually are, then it's probably not very fatty, and is a good source of protein. In any case, the cholesterol is a bit high...
1lb of lean beef brisket, trimmed to 0" fat:
920 Cal
43g Fat
16g Sat. fat
390mg Cholesterol
295mg sodium
0g carb
126g protein
