Default Tofu Help

I have some Tofu here and would like to incorporate it into my diet. I would like to get some feedback with some fairly easy recipes from experienced Tofu eaters on how they prepare their Tofu.
I did see someone ate it raw, on these message boards, and I'm not really looking to go in that direction.

I know I can search foodtv.com, and have....but would like some feedback on tried and true recipes from JSF members.

Hey! My acronym (JSF) is catching on! Cool!

I've leaned away from tofu recently, but the big thing to remember is that it'll absorb any flavor that it's around. That is, so long as it has room to absorb. That means you need to press all the water out of it. One of the best ways is to put a ton of paper towels underneath your block, and a baking sheet with some cans (beans, whatever) on top. The weight will slowly push the water out.

if that's not fast enough, start pushing on the baking sheet. Water will start dripping out pretty quickly -- you'll probably be surprised. After that, season the hell out of it. Anything that's tasty should be fine. I personally like to cut it small and fry it (you can dry-fry it too, without oil) until it's crispy on the outside and a lil soft on the inside. If you cut it right you can use 'em like french fries!

Of course all of this is done with non-silken tofu. Use the silken tofu in place of yogurt or similar (especially in smoothies!)

And go to foodtv.com and look up "Good Eats" with Alton Brown, he did at least one show dedicated to Tofu.

I love it the Japanese way, boiled, then sprinkle some dried bonito flakes over it and put soy sauce on it! Its really quick, so i do it when I'm starving and having to wait to finish dinner.

The bonito flakes can be found at your local asian grocer.
