Buffalo Chicken Bites

Default Buffalo Chicken Bites

Not 100% yet, but better than hot wings:


2lbs Chicken breast, cut in to 1" cubes
1 5oz can of tomato sauce
1/2 c Crystal hot sauce
1 tsp honey
1 tsp ketchup
2 cloves of garlic, minced

1 c almond flour
1 c pecan meal
1/2 c egg beaters
1/2 c cold water

PREHEAT: oven to 350

MIX: Tomato sauce, hot sauce, honey, ketchup, garlic. Let sit for a few hours (to let garlic permeate everything)

Run chicken through almond flour, then egg/water mixture, then almond meal. Place on cookie sheet. Bake for 20 minutes. Roll chicken in sauce.

Optional: set oven to broil, place chicken back on cookie sheet and bake the sauce on - watch to make sure you don't burn the sugars.

I'll post a comparison with regular buffalo wings in a bit..

only thing I'd recommend is Franks Red Hot Sauce over Crystal, but that's a personal choice

sounds good.
