Simple Quick Salad with tuna!

Default Simple Quick Salad with tuna!

I made this today for lunch and it was pretty damn tasty...I wasn't eating enough fat in my diet so I use olive oil as a boost, I'm sure the vinegar alone is good - thats why the high fat on the totals.

8oz mixed green (bagged salads)
1/4 cup onion diced
1/2 cup carrots
1/2 cup peppers diced
5 oz tuna (I used the starkist spicy mix, so my totals will be different)
1 tbsp olive oil
1 tbsp rice vinegar

Mix it all together and you have edible tuna that tastes damn good and is pretty healthy....here are the approx cal totals:

Calories: 350
Fat: 17g
Carbs: 20g
Prot: 35g

As an alternative to lettuce -- namely iceberg lettuce -- I almost always use fresh whole spinach. I like the taste, plus it's chock full of good stuff.

I usually get the "spring mix" that has a bunch of different kinds of roughage.

It sounds gross, but dandelion greens are EXTREMELY good for you (arguable the best geen leafy on the planet) they are a tad bitter, and you need to make sure they come from a place where they arent using fertilizer or chemicals. I switched my yard to 100% organic fertilizer and weed/insect control so I can eat the little bastards when they come up.

Here is some quick data I found, but is by no means complete.

I second the dandelion thing. Tasty.

I first discovered them in Germany where I had a Loewenzahn (dandelion green) salad. I thought this looks just like dandelions! Doh!
Probably wouldn't have eaten it if I knew what it was.

Where can you buy them here?
