Low-carb Protein Brownies

Default Low-carb Protein Brownies

I've been experimenting with protein bar recipes lately. This is my latest effort.

Whey protein powder (chocolate): 1 scoop (30 g)
Oats, rolled: 2.5 tbsp
Coconut flour: 2.5 tbsp
Stevia powder/liquid: ~1/8 tsp
Cocoa powder, unsweetened: 5 tsp
egg white: 1 large
applesauce, unsweetened: 5 tbsp
natural peanut butter: 5 tsp
water: 6.5 tsp
baking soda: 1/3 tsp
salt: 1/3 tsp

Combine whey, oats, coconut flour, cocoa powder and salt in a food processor. Whizz until you get a fine powder.

With a handheld blender mix PB and egg white until you get a smooth cream. Mix water and baking soda into applesauce, then add combination to the PB and egg white mixture. Add dry ingredients and blend until you get a smooth batter.

Line a 9"x4" baking tin with parchment paper and pour in batter. Bake for 15 mins at 350°F (175°C). Makes 3 servings.

These taste really good with a dollop of whipped heavy cream sweetened with stevia or Splenda. They're moist enough by themselves but the cream just adds a little something. A bit like Sachertorte with whipped cream. They are also very filling.

those look really good. i'm not much of a baker, but you make it sound easy. i think i'm gonna have to try them...

i don't have stevia powder, will that change the taste? is there anything more usual to use instead?

If you don't mind the extra carbs, you could just use a tablespoon or two of regular sugar. Alternatively, you could add some artifical sweetener that can withstand heat. Or, if your protein powder is sweet enough, you may not need extra sweetener at all.
