Default Curious about the coconut!

I bought a weird looking coconut at the store the other day, and cut off the top as instructed and found some sort of water inside. So, I grabbed a straw and enjoyed. Pretty tasty stuff. I looked it up online and found it was called coconut water (clever name, eh?), and was relieved to find that I had NOT drank that much coconut milk which is ridiculously high in saturated fat (to the tune of 50g sat fat in 1 cup).

I read up on the coconut water and it's apparently good for recovering from vigorous exercise. I enjoyed it as a late night snack, but I'ma go back to the store and grab a few more for post workout!

The nifty things you can find at the supermarket I picked up this other fruit called a "Florida Starburst Pummelo" to try tomorrow

So I assume this was a young coconut (otherwise it would be coconut milk)?

Anyway, I wouldn't worry about the fat in coconut milk, so long as you account for it in you diet. Coconut oil is high in saturated fats, but my understanding is that it's very healthy fat overall. The fact that it's saturated doesn't mean it's bad for you (in appropriate amounts), despite what some of the "experts" say.

I cooked some popcorn in coconut oil the other day. Quite tasty. Probably as good for me as using peanut oil (my usual option), too.
