Default Chicken in tupperware casserole

If you grill your chicken and then keep it in the fridge, the next day it is already hard to swallow.

What I do is use this tupperware casserole. It's made of a light material you can use in the microwave and works real fine. Actually it is meant to be used in the microwave only. My wife bought this one in Spain for about 60 Euros. It is worthed getting one. You can buy one in the US a lot cheaper;

It wont grill the chicken, but will be more like made in the oven and you can reheat the next day and will still be tender.

What I do is I put the chicken pieces inside the casserole, put some thyme or whatever herbs you like, and what we call sweet red pepper and squeeze half lemon over it, then put in the microwave for 10 minutes.

After that you open the casserole, turn the pieces, and squeeze the other half lemon over the chicken, then put it in the microwave for 10 more minutes.

And this is what you get at the end, a very tasty chicken that will not taste like sandpaper the next day.

Just an idea. It works great for me.

Glad you both liked it. This is real simple, but then, like 99.9% of us, I don't have time to do anything more complicated.

I also like to cook pumpkin a lot. I cut it in four pieces and cook it in the oven and it takes about two hours. And now that I think about it, I'll give it a try in the tupperware container. Pumpkin is as healthy as it gets. If it works out I'll let you know.

I'm glad posting this recipe was of some use.

As per the pumpkin, it works also in the tupperware container. You cook it in the microwave for 20 minutes and then put it 10 minutes in the oven at 180 degrees celsius (abt. 350 fahrenheit).

The result is equivalent to cooking in the oven for 2 hours.

Are you using canned pumpkin?

No, I use fresh pumpkin. I cut it in fourths before cooking it. They are hard to cut. If possible ask them to cut it for you at the store.
