Celery & Onion soup

Default Celery & Onion soup

Ok,
Here's what I have come up with after trying for a week or so to get a decent soup to have .

FOR ABOUT 3 GOOD SIZED BOWLS

Celery 700gms (approx 1.5 lbs)
Onion 80 gms (approx 4oz)
2 Stock Cubes
Water 1.5 litres (apporx 3 pints)

METHOD

Chop up the Celery & Onion quite small
Dissolve the 2 stock cubes in the 3 pints of boiling water
Add the Celery & Onion
Bring it all to the boil then simmer for about 1 hour.
Once it is done blend it & add a fair bit of groun Black Pepper & a sprinkle of low Sodium salt.

BREAKDOWN PER BOWL

Calories = 47
Protein = 2g
Carbs = 6.5g
Fat = 2.3g
Sat Fat = 0.6g

I know some one told me about watching the sodium levels in stock cubes, but I used them here for convieience.
You could probably find "healthier" stock in a super market I guess.
Please let me know what you think of this recipie.

I forgot to say Fudgam, add in a handfull of fresh,chopped Parsley...that really finished it off a treat !

toss in a frozen chicken breast about 20 minutes before, and throw in some chopped baby carrots (in half, or just thick chunks of regular) and you got yourself a damn good soup without the boullion cubes. just pull out the chicken when you add in the vegetables let it cool in a bowl about five-ten minutes, tear into whatever size pieces you want and add it back in to the soup.



And if you get chicken thighs or drumsticks from the butcher it's cheaper and you get better stock out of them by boiling the whole thing skin and all and then removing the skin and bone after the chicken has cooled. Necks are a great thing to use for stock and there's some good eating on one of those if you want to bother.


But yeah celery and onions are pretty much the basis of all my soups.
