Spinach and Cream Cheese Stuffed Salmon Fillets

Default Spinach and Cream Cheese Stuffed Salmon Fillets

I was fooling around in the kitchen this weekend and came up with this recipe. Easy to make, and tastes really good!

Spinach and Cream Cheese Stuffed Salmon Fillets

Ingredients:
2 6-7 oz Salmon Fillets
3 Tbsp Fat Free Cream Cheese
4 Tbsp Chopped Spinach (Steamed or boiled, just not soaking wet)
Salt
Pepper


Preheat oven to 380 F

1. Foil a baking sheet and spray with non-stick cooking spray.
2. Blend cooked spinach and creamcheese with a fork until it makes a nice creamy paste.
3. Cut a slit in the side of the salmon fillet so it resembles a pouch
4. Spoon the spinach/cheese mixture evenly into both salmon fillets.
5. Salt and pepper the tops of the fillets.
6. Arrange on foil with the open side of the fillets facing each other. Make sure they are pushed together so the filling doesnt leak out!
7. Bake about 16 to 18 minutes, or until the salmon has a light pink color but flakes with a fork.
8. Eat up!

Nutritional info still needs to be tallied up. Ill post that shortly.

I just ate lunch, and already I'm getting hungry again!!
