Blueberry Muffins

Default Blueberry Muffins

Ingredients:

1 ½ Cup Whole Wheat Flour
2 tsp Baking Powder
1 Egg
1/3 Cup Skim Milk
2 Tbs Canola Oil
1/3 Cup Splenda
1 Cup Blueberries
1 Tbs Cinnamon

Note - Blueberries can be substitued for other fruits or removed all together.

Directions:

1. Preheat Oven to 350 Degrees and lightly coat 12-cup Muffin pan with cooking spray
2. In a large bowl, combine flour, and baking powder
3. In a medium bowl, combine egg, milk, oil and Splenda. Mix well
4. Pour egg mixture into dry ingredients and stir until moistened.
5. Add fruit and stir until mixed
6. Place ¼ Cup batter into each muffin cup
7. Bake 15-20 min or until golden brown and a toothpick inserted in center comes out clean
8. Remove from oven and sprinkle with cinnamon
