Meringue Cookies (low fat, low carb)

Default Meringue Cookies (low fat, low carb)

Here's what we enjoyed for Mardi Gras. They're a little work, but they're sooooo good.

Meringue Cookies:

3 egg whites
1 c. sugar
1/4 tsp. salt
1 tsp. vanilla
3/4 c. finely chopped walnuts
3/4 c. flaked coconut

Heat oven to 300. Blend egg whites, sugar, salt and vanilla in top of double boiler. (I just use a small pan nestled inside a larger one.) Place over boiliing water; beat with hand mixer until mixture stands in stiff peaks, scraping bottom and sides of pan ocasionally with rubber scraper. (Meringue will becocme lumpy if you don't scrape.) Immediately stir in walnuts and coconut. Drop heaping teaspoonfuls of dough on 2 lightly greased baking sheets. (Place cookies on baking sheets immediately; bake one sheet at a time.) Bake 12 to 15 minutes, or until lightly browned. Remove from baking sheets immediately.

Yield: 48 cookies

Fat: 2.4 g.
Carbs: 5.38 g.
Protein: 2 g.

Mmmm I love Meringue!
I wonder if Splenda would work in place of the sugar? I think I have to give it a try
