Default Simple as hell potatoes

Okay, this sounds stupid, but it's really good, I make it all the time, it's unbelievably cheap, and a bag of potatoes lasts a good week.

You need:
3 Potatoes
1 Tin of carrots
a few sprouts or some green veg that can be mashed.
Tomatoe sauce

Boil the potatoes
Meanwhile boil the sprouts and add a bit olf salt and cook up your carrots.
When everything is ready, mash the potatoes untill very fine, put it all on a big plate, and mash it toghether

Now the wierd bit, add tomatoe sauce. mash it toghether again, if you want you could add in steak pieces or chicken pieces for protein...

Put on a plate and eat.

It sounds stupid, but I love it really

another:

You'll need
Homemade soup
Potatoes

Take al ook at John's homemade soup recipe, and make a pot of it, boil potatoes and mash, and mix the potatoes with the soup on a plate, and eat. Another great meal with plenty of veg, and protein weither you added any meat or not.

I'll add some more if I can think of any
(I really do just think of meals at the top of my head in the middle of cooking )

Potato Wedges

Peel a few potatoes, and slice into wedges, like an orange. Rinse and dry. Add a little bit of olive oil and seasoning as desired (paprika, garlic powder and onion powder is good), and stir to combine. Arrange on baking sheet, and bake at 400 for 45 minutes to an hour.

You don't need much oil for these, and my kids gobble them up like crazy, so I always make lots.

I make these all the time! They're great. I like them with rosemary. The kids like seasoned salt.

Here's my favorite way to eat potatoes:
Make a "baked potato" in the microwave (6 minutes). Slice open Put 1/2 c. cottage cheese inside. Micrwoave 3 more minutes. The cottage cheese actually kind of melts and gets a bit stringy! You can add seasonings, too. (like the ones mentioned above)

It's a great way to eat baked potatoes with other people when they're putting all that "junk" on theirs. It's also a good post workout snack: high GI carbs and protein.

Yep. Lots of people use cottage cheese instead of ricotta in lasagna. That's how I do it, too.
