Sorry . . . all the pasta recipes I know probably aren't that healthy. LOL! I'm Italian. . . You can do anything w/pasta though: Toss it w/Olive Oil and cut up chicken breast, etc.

Add two pounds of sautéed lean beef or buffalo to a jar of ready-made pasta sauce. Sauté a small pack of mushrooms (4-8 oz), a large onion, a couple garlic cloves and a finely diced red pepper. Add to sauce and meat. Simmer for at least an hour. Season to taste (cayenne, salt, pepper, etc.). Eat with pasta of your choice (I use spelt).
Pretty easy. Making your own sauce is very simple, too. Have you searched the recipes?

Not a recipe, but a time saving hint. When you do make a sauce (Choppie's sounds delicious) make a large batch and freeze the extra in portions. It doesn't take very much longer to make a triple batch than a single and you'll then have future quick meals.

You can decide how healthy this is (The quantities are just for ratios, you can of course scale back for smaller portion size). In general I don't think pasta is the healthiest meal out there, because I find attempts to make it too healthy (e.g. whole wheat pasta) often defeat what is great about it.
Linguine w Spinach Chicken Pesto
- linguine (4 oz per person)
- chicken breasts or thighs (up to you how much you want)
- spinach (just under a cup per person)
- olive oil (about 1.5 tbsp per person)
- parmesan (about half ounce per person, could try less)
- garlic (about one clove per person)
- nuts: pine nuts, walnuts, or almonds, your choice (about half ounce per person)
- sea salt
Make pesto
- add spinach, oil, garlic, parmesan, salt to a food processor and puree
Make chicken
- grill, or broil or whatever
- cut into slices
Make linguine
- boil linguine, drain
- add chicken and pesto to linguine and mix well
