Try Panko Bread crumbs. They are Japanese and are more crunchy than our version. Another good open is to grate a clove or two of garlic into the bread crumbs before adding it to the chicken. It adds great flavor. Great post Ca$son, I enjoyed your journal as well.

This wasn't my favorite dish but I will say it's very convenient to freeze and take to work for lunches.

It's nice for a change. I'm southern and like everything hot and spicy, so this was a little different for me.

I just don't think it was my thing. I think if I prepared it better, it would taste better.

I established that I'm not a basil fan, so I would use spinach next time.

I also used whipped eggs instead of mayo. I also forgot to put salt and pepper on the chicken breasts.

It was alright but not my favorite.

Thanks for sharing this Casino, it was awesome!
I was out of tomato when I made it, so to get some extra taste I had some fresh chili in with the cheese and spiced the outside with some garlic pepper. It came out awesome!

When I seen this I really liked the look so might give it a go. Reminded me of something my gf made a while back, chicken breasts, stuffed with philadelphia cheese (not sure which, basil, chives, garlic) (Don't know if you guys get it over there), wrapped in parma ham. Was gorgeous, probably not the most healthy thing around compared to most recipes on here but just thought I'd share.
