I love having pumpkin seeds, i talking about with the shell and all. Especially around this time of year. :drool:

I usually just take them right out of the pumpkin and place them on a cooking sheet, spray lightly with pam and and some salt. Then bake them for a long time.

are they considered a good treat for cutting or a keep away item? :confused:

Pumpkin seeds are high in omega-3 fatty acids, which are good for you. Enjoy in moderation because they are dense in calories. Also, go light on the salt. But you can enjoy some guilt free.

I didn't know about the omega 3's, that's great. :tucool: I know that with the shells on the fiber content has to be high.

exactly how calorie dense are they?

If you love pumpkin seeds, (like I do) you have to try some Pumpkin Seed Butter. It is just like peanut butter, only made with pumpkin seeds. It is more expensive, but has a better EFA profile than peanut butter. It tastes amazing! Be warned, the color of it is bright green.

I actually considered offering it on my site, but I wasnt sure what the reaction would be due to the price. It is around $12 for a 20oz jar.
To me it is worth the price, so much so that I might be tempted to eat all the stock!! :) If there is interest, I could get some in stock.

i can find almond butter, cashew butter, hazelnut butter, soy butter, almond/brazilnut/cashew butter, and probly a few other ones, but i have never seen pumpkin seed butter!!! i must find it! :D

I love almond butter... well worth double the cost of peanut butter IMO (hehe but I always keep both on hand now)

Couldn't you make your own pumpkin seed butter? Not out of your own pumpkin seeds from halloween, of course (that's a LOT of shelling!), but I know you can buy shelled seeds in bulk.

I love pumpkin seeds, but I don't see why they even need to be sprayed with oil before roasting. It adds nothing to flavour, they already have enough fat, and the salt should stick just fine to the seeds seen as they're coated with a sticky membrane-type thing.

How about roasting them with seasoning salt, or how about tossing them in a bit of vinegar and salt before roasting (can you get salt & vinegar seasoning? I know I see that stuff for popcorn at the movie theatre).

Just an FYI - I am going to have Organic Pumpkin Seed Butter from Omega on my site at the end of next week. It is 100% organic, an excellent source of omega 6 efa and omega 9 fatty acids.
