I eat whole grain bread regularly. I try to buy healthy breads with all the good ingredients and such. My roommate just purchased a bread maker, so now we make our own whole wheat bread - it's delicious! I have two questions.
On Malt - I read in "Beyond the Journey" that malt, although not listed as a sugar formally, still resembles a sugar in the way your body reacts to it. I'm not talking about maltodextrin here, though, just malt. What exactly is malt, and should I avoid buying bread that includes it/putting it in my own bread?
And what in the name of Christ on a Crutch is Vital Wheat Gluten? I'm not allergic to it; I know that much. What is it, and is it good or bad?
