Hi there... I'm a bit curiuos here... Usually in the label, it says that a tablespoon of olive oil or any other oil contains about 15 gram of fat. Now, what if I cook my food using oil but heat it first until most of it evaporate will it still contains that 15 gram of fat?

I don't believe that oil evaporates. If some of your oil is missing, it has soaked into the food. Oil can burn away but then you'd see it smoking. You don't want it to get that hot.

No, I mean I let it evaporate first before I put the food I want to cook, so anyway, are you trying to say that everytime I cook with oil, I add an extra 15 gram of fat?

Don, I'm having a little bit of a hard time understanding exactly what you're doing. Someone correct me if I'm wrong, but I don't think oil evaporates. I know that if I use a tablespoon of olive oil to brown chicken, I count that as 15 grams of fat that I've added. Unless, of course, some of the oil remains in the pan when I remove the chicken.

If I understand you correctly, you are putting oil in the pan and heating it until some of it is gone. What you are doing is burning off the oil, and there's no need for that, simply use less oil to begin with. It's not a good thing to burn the oil. If you're burning off the oil, then the fat has burned away and I suppose the calories have burned away with it.

I believe that it's not good to heat up olive oil that much. I've heard that it forms something called "funny fats" that aren't healthy to consume.

if you heat an olive oil 320 degress (i think its 320) the oil turns into trans fats and they are the worst kind for you. 320 degrees can be achieved by heating at a medium low heat. to avoid this keep some water in the pan the temperature of the pan will not exceed 320. or if the oil is part of a recipe like tomato sauce this problem is also avoided.
