Well I'm sort of busy and canned meats such as chicken breast are more convienment for me as opposed to cooking them.... Do canned meats have hts ame nutrients and does it have preservatives... should i just cookmy chicken breast the night before??

Personally I'm just not a big fan of chicken in a can, its also more expensive and has more sodium. I cook enough chicken for 3 or 4 days in advance and keep it in the fridge. Seems to work fine for me and I'm pretty sure most the people on here do just about the same. Give it a try!

I cook between 7-9lbs of chicken each week. I can get to be some work, depending on how it's cooked. I've opted to trim all of the tendons and excess fat off of the boneless skinless breast, and throw the whole batch in a deep sauce pan with just enough water to cover all of the meat. I then just set the gas on low, and let it cook like a dutch oven for 60 minutes. I takes any remaining fat off of the meat, and it stays really moist. That's about a weeks supply for me, and I throw it in salad, burritos, etc... It's much more convenient if everything's already cooked up. I could never eat canned meat...cept maybe SPAM as something sadistic... :lol:

...in a deep sauce pan with just enough water to cover all of the meat....You should try using chicken broth instead of water. The chicken comes out a with a much richer, meatier taste than you can get with water. They sell huge cans of Swanson chicken broth at most grocery stores.

I usually roast chicken breasts but that sounds like a good way to prep a week's worth. I'll have to try that (with water or maybe this lo-sodium vegetable broth I use for cooking rice).

I just checked the sodium on the swanson's broth. 600 mg per 1 cup serving. But, since your only cooking with it, I doubt that a chicken breast could absorb a cup of broth, plus it's probably be pretty scary to see one that did! :spaz: I'd guess that if you cooked 7-9 pounds in a big pot, that maybe all of that would absorb like 1-2 cups worth, but I'm no scientist.

Tried the George Foreman grill? It takes like 7-8 minutes for a chicken breast.

yeah but have you seen the sodium content of Swanson broth? yikes! Well, you don't drink it, you pour it out after the chicken cooks. Very little of it is actually absorbed.

They have a 'natural' chicken broth too with 1/3 less sodium and no fat. Checking the grocery store might yield something with even less sodium but I doubt it would have the same flavor.

how long does cooked chicken keep in the fridge? Would I get away with cooking 5 on sunday for my weekday lunch meals?

I noticed you guys cook a weeks worth, do you freeze them or are they OK in the fridge?

You can freeze cooked chicken. I do it all the time and just thaw it in the microwave when I'm ready for it.

Sometimes I do the Foreman Grill. I encrust the boneless skinless breast with Cajun Foreplay, and drop em on the grill for about 8 minutes. Takes along time to grill 7-9 pounds worth though, that's why I only do it occasionally. Plus the sodium content of the cajun spices is fairly high...On another note, cajun spices have been shown to kick your metabolism through the roof. So does that cancel out the sodium? :lol:

It keeps for some time. I cook everything by Sunday night, and have eaten that same chicken the following Sunday, and it's fine. I eat almost a pound per day, so it doesn't stick around too long.
