View Full Version : Spicy Sheared Chicken with Chipolte Salsa

I usually dont like spicy stuff...but DAMN is this tasty!! :drool:

1/2 teaspoon paprika
1/2 teaspoon ground cumin
4 boneless, skinless chicken breast, all visible fat removed
Veggie oil spray

Salsa
1/2 to 1 chipolte canned in adobo sauce
1/2 cup finely chopped tomato
1/3 cup finely chopped green pepper
2 tablespoons finely chopped green onions(green and white parts)
2 tablespoons snipped fresh cilantro
2 tablespoons fresh lime juice
2 teaspoons olive oil
1/4 teaspoon salt

IN a cup or small bowl stir together paprika and cumin (i throw in a little curry as well). Rub evenly over both sides of the chicken

Heat a large nonstick skillet over high heat. Spray with veggie oil spray. Cook chicken for 1 minute. Reduce heat to medium cook for 5 minutes. Turn the chicken over, cook for 7 minutes or untill no long pink in the center.

Now the recipe called for chipolte peppers...i COULD NOT find those damned things to save my life. I just used Jalepeno peppers. This recipe has you stir all the ingridents together after you mash the chipolte in a paste....thats no fun! I just put all the salsa ingriediants into a blender and hit blend...i think it comes out much better that way.

to serve spoon salsa over chicken or server salsa on the side. Or you can just make the salsa part and grab some chips!
BTW corn on the cob is a kickin side dish for this

No Chipotle Peppers??!!?? Where are you from!!?? ;) Thankfully we have the choice of fresh Chipotles, Canned, make your own or Store made here in Texas!

This recipe sounds wonderful...I will have to try it

P.S. Chipotles are just smoked Jalepenos, so if you have a smoker and some time you can make your own!

somehow i dont think i could fit a smoker into my apartment :lol:

i had never even heard of a chipolte before i read this recipe. Peppers? Here not so much, you need a KICK ASS cheesesteak come to philly! :D

That's what balconies are for! Seriously, in this state Everyone has a grill, smoker or both nearby! I lived in an apartment complex that had an area for everyone to lock up thier grill at night, much like a bike rack!

I just got a cool Grill/ Smoker for my birthday....I use the heck out of the grill, but I have yet to fire up the smoker...I think it needs to cool off a bit. There is nothing better than sitting in the backyard on a Sunday with a cold beer, a good book and stoaking the fire for 3-4 hours!

Another option for Jalepenos would be too Char them over a gas (or electric) stove until the skin turns black, then put them in a paper bag for a few minutes, you can also roast them in the oven until the skin is black and then "sweat" them in a paper bag. It gives them a really nice flavor, and would be another twist on your recipe.
