I didnt want plain chicken last night so I decided to make a batter. I know you can buy certain batters but a lot of them arent too healthy for you. Here is what I did:
Poored about a 1/4 cup of egg beaters into a bowl and put the chicken in it getting it as covered as possible. In another bowl I took the new Special-K vanilla almond cereal (about 1/2 cup) and crushed it until itwas fine. I then rolled the chicken in the batter and took a few more almond slices from the cereal and lined the top of the chicken. Bake for 15-20 minutes at 350 to keep the chickens moister and not burn the cereal.
It was pretty good and very healthy - approx. 320 calories, 4-5g fat, 15-20g carbs and about 46g protein.
