View Full Version : My homemade vegetable soup

Here's a vegetable soup I like to make. It makes about 5 liters which should last one person two to three days, depending on how much you eat. Just put everything in the fridge and heat up smaller portions whenever you're hungry.

Actually the recipe is not fixed, I usually take whatever vegetables I have available and make a huge pot, but half an hour ago I made another batch of soup and wrote down everything I did, so here's today's recipe:

350g Broccoli
550g Cauliflower
380g Carrots
300g Green beans
400g Spinach
600g Potatoes
1ts Olive oil
1tbs Butter
3dl Skimmed milk

Add spices according to your own preferences. I use oregano, thyme, bay leaves, salt and pepper.

Add enough water to make 5 liters of soup and boil until all the vegetables are soft. Run everything through a food processor until the soup is silky smooth and the soup is ready to eat.

5 liters of this soup have the following nutritional data:

1231 Calories
57g Protein
20g Fat
190g Carbohydrates

For one bowl of soup divide the numbers by 10.

Obviously you need to boost the proteins, so adding a healthy amount of meat is a good idea. Personally I like to add lots of cottage cheese in my bowl while eating. About 100g cottage cheese per bowl I think...

It's a little heavy on the fat, and I'm sure you could cut the oil and butter, but I like the flavor and prefer to compensate by what I eat during the rest of the day.
