I am on the maintenance phase of creatine. I understand that I should be taking in about 5-10 grams daily. I take it twice daily, after my daily training sessions. Should I take it on my rest days when I am not training?

Yes, I would only take 5 gms each day. I would drink about a gallon of water during the day.

In agreement with this. May want to drop down to about 5g/day, 3 before and 3 after your workout, IMO.

Take on the off days, and also 5 would be fine !

I will go against the grain... I too take 10 grams a day on training days. 5g post workout (Phosphagn HP) and 5g before bed (AST micronized). On off days I only take 5 grams. I have found this to be a great formula for results. I typically will do 8 weeks on and 2 weeks off, but that varies from time to time. Dont forget to up the water intake! OH yeah I dont load either...
