Real easy.
made the dressing w/ the juice of 1/4 lemon, 1 tbsp grey poupon (dijon mustard), olive oil and white wine vinegar, kosher salt, and pepper (to taste) and a sprinkle of splenda.
Simply wisk the dressing in a normal vinegrette fashion, throw some pre-washed baby spinach in, and a couple chopped hard-boiled eggs.
the dressing is a sweet mustard/lemon taste and goes really well.
if you're Atkins'ing add some chopped cooked (crisp) bacon for even more fun. However I skipped the bacon.
