OK. I am too cheap to buy Egg Beaters so I take 3 eggs and remove 2 yolks and scramble this for breakfast on some mornings. Here is the problem. I have to be at work at 7AM and am trying to fix the eggs at 5 AM. So here is my question. If I mix them the night before, will the eggs still be good in the morning as long a I keep them refrigerated?

Yup, no problem with beaten eggs as long as they are keep in the fridge. One disadvantage of this though, is that they will not make a very fluffy omelet. But if your main concern is the nutritious value (i.e. proteins) of egg whites, you'll gain time by getting your egg prep ready the night before. I do it and they keep for a couple of days. You might want to beat'em up a little more before cooking'em.

you might be able to use a microwave too...not the most tasty way, but certainly quicker. You could make the mixture the night before, and nuke it in the morning...

Cool. Thanks for the info guys. I just wanted to make sure that the eggs would not spoil. Don't need to get food poisoning in the middle of cutting.
