So most of what I have read says to go with protein before bed so you dont eat up your muscles which I can understand. Right now I typically 200ish caloires in lean turkey with a small amount of mustard and a handfull of raw spinach. Is there any reason I shouldn't be eatting that spinach in there? I do get a lot more veggies during the day so is by no means my only greens (part of the 1/3-1/2 lb I tend to eat a day).

that is fine, carbs like spinach will only help you before you goto bed, they have a GI of like 10, so they will be digested very slowly, you will burn them all up in your sleep anyway so dont worry too much about it
just dont start eating ice cream and sugar-pops before bed :p
