just saw a tip on the back of my generic brand oatmeal container. instead of using bread crumbs in meatloaf substitute the oats. the main ingredients being oats, low fat ground beef and eggs meatloaf is actually very healthy.

Don't forget the texturized vegetable protein! I don't make any meatloaf without TVP.
I made a meatloaf once with cottage cheese in it. My husband hated it, but with all you fanatics, it's worth a try.

what exactly is that? does it change the flavor or consistency? where can i buy it if i decide to try it? sorry for all the questions.

TVP is dehydrated soy protein granules. You hydrate them with almost equal amounts of boiling water (or tomato juice or something else). You can buy it in bulk food stores, bulk sections of grocery stores, or health food stores. It changes the taste very slightly, as if you were adding tofu to something. My husband says it gives him gas, but, too bad. It's too healthy NOT to use.
