My brother brought this up...

if you have a chicken breast, is it worse to "fry" the breast (not deep fry, but put a couple tbsp of olive oil in a pan).. is that worse for you than just the raw olive oil?

you always hear that fried=bad but why would cooking olive oil make it worse for you?

The basic answer is that heating an oil can increase the amount of more harmful molecules (trans fatty acids). An excellent (and detailed but not overly so) book on the whole good fat/bad fat issue is Udo Erasmus's "Fats That Heal, Fats That Kill":

It depends on the oil. Some oils have a lower smoke point than others. I just wrote about my take on cooking fats (http://bodybygrub.wordpress.com/2009/03/23/know-your-cooking-fats/) on my blog.

Just grill man, its a far better option, just dab some oil over the grill about 5ml, keeps chicken from sticking.

Nothing wrong with cooking in the right oil at the right temps.

Grilling meat can introduce carcinogens PAH and HCAs. So nothing's perfect.

:nod: I love stir-fries. I eat them a lot. You just need to use the right oil (e.g. peanut).

Never said anything was wrong, i regularly fry in olive oil, but if fat reduction or elimination is part of your goals then grill is by far the better option.

Just to clear up things, are you saying dietary fat reduction is critical to body fat reduction?

I was challenging the statement:

"its a far better option"

I think there are too many variables in an entire diet to just say that cooking meat in oil is far worse than grilling.
