Watch a bit of Andre Zimmern or Tont Bourdain and you might develop a longing for some offals or bizarre meats (bizarre from an American scope, that is). I certainly have.
As someone watching what the eat though, I've gotta wonder about these foods from a nutritional standpoint as well. So I ask for whatever nutritional nuggets you may have on some offals/uncommon meats. Maybe a few questions for prompting?
-With regards to beef tripe, I've heard of varying fat content correlating to which of the stomachs the tripe came from. Is this so, and if so, what type would I more commonly find available as a food product?
-How's liver from a nutritional standpoint? Presumably, some animal livers are more nutritionally-sound than others, which sorts might be the healthiest? Lungs? Intestines? etc.
-What of other strange meats? Ear? Feet?
-Any comments on black pudding or any of its varieties?
