We are heading to some new friends house tonight for dinner. When we asked what we could bring they asked if we could bring dessert. The only qualification was to try to bring something without dairy in it as one of them is lactose intolerant.
I have no idea where to start...does anyone have any thoughts on what would be good? I am thinking fruit + something :confused::confused:

How does your friend fair to yogurt? I'm lactose intolerant, but yogurt is ok for me.
You can try making some fruit parfaits with whipped yogurt.

Sorbet's are easy to make if you've got a home made ice cream maker.
Or stuff like grilled peaches or other fruit based desserts. Mmmm. Apple pie :drool:

You can try making some fruit parfaits with whipped yogurt.I'm lactose intolerant so I have a lot of experience with this. I used to make tons of desserts, but I don't so much anymore. I don't eat dessert when I'm out all that much anymore either, because so much of it is filled with milk products.
I'm one of those ones who's pretty okay with yogurt. I made this dessert tonight. It was really easy, and fairly quick. As desserts go, it's quite healthy.
Marshmallow Pineapple Jello-O Pie
Crust:
1 1/2 C graham wafer crumbs
2 T brown sugar
3 T yogurt
Press into 9 inch pie plate. Bake at 350 for 5-6 minutes. Cool.
Filling:
Chop 16 marshmallows into quarters and put in a large bowl. Sprinkle a packet of Jell-O over top (I used "Light lime"). Boil 1 C of water, pour over top of powder-coated marshmallows, and stir until melted. Open a chilled can of pineapple tidbits or crushed pineapple. Add the juice only (reserving solids) to the melted marshmallow mixture. Stir well. Refrigerate 40 minutes, stir, then stir every 10 minutes until almost set. At this point, add the pineapple solids and 1 C yogurt (I used sugar free 0% fat vanilla). Pour over cooled crust. Chill about 20 minutes or more, cut into wedges, then serve.
This is also really tasty with frozen strawberries, using water or soy milk as the liquid.

Meringues are an option. Those are basically eggwhites+sugar.
You could also make a jello mold. :dance:
