I was wondering if anyone can give me any suggestions on how to efficiently count my calories, and what sort of ratio I should shoot for for cutting. im 6'1 and I have gone from 214 to 191 in the last few months, but I think I have gotten as far as I can by simply eating better. I need to know how many calories im taking in, but I find fitday damn near impossible to use, I can find whipped eggplant easier than an egg etc... also, most things I eat are not on fitday. How do you guys count calories and know that its right?

my diet is usually close to this

egg beaters and fruit for breakfast
fruit and veggies for snacks
sandwich with lots of veggies and turkey or chick
more fruits/nuts
dinner is lean meat and veggies.

I think I might be starting to gain muscle, becuase I look way better, but the scale isnt moving.

Just takes a bit of initiative. Create your own spreadsheet, I find that to be the easiest way. Enter all of the foods you eat (from labels if possible, and for natural foods like potato etc. use calorieking.com to get nutrient values). Weigh everything, get the exact amount of calories/macronutrients down and it removes all guess work. It's a pain in the ass to set up, but once it's done, it's done and you can use it for a long time.
