Chicken and Broccoli
2 TBS olive oil
1.5 lbs chicken (no skin/fat trimmed)
2 big heads of broccoli
1 can lowfat and (MUST!!) low sodium chicken broth
2 TBS arrowroot powder (you could use cornstarch but add the carbs!)
Heat a wok (i have an electric) as high as it will go - usually 450. Cut chicken in to strips. Place oil in wok. Immediately put in chicken (if you wait you'll have a splatter all over the place). When chick in 85% done, remove from wok. Put chicken broth in wok, stir the bottom to get all the good stuff up, either carefully place the broccoli on the side of the wok or use a steamer basket to steam the broccoli for about 5 minutes. Whisk in the arrowroot powder, and whatever other spices you like (red chili flakes are good) until its smoothe. Add chicken and stir fry until sauce coates eveything nicely.
Eat.
