View Full Version : Delicious AND HEALTHY Meatloaf!

This is a great recipe for those cooking for a family (Or it would last one person several days).

I'm sure there are ways to make it healthier (like leaving the topping off), but it's pretty healthy for a family meal.

I made this last night and the wife and kids loved it. They even want me to make another one today! It was moist, held together well, and had a very nice flavor.


Meatloaf:
1.5 lbs of 96% Fat Free Beef
1/4 cup egg beaters
1 cup skim milk
1 tablespoon worcestershire sauce
1/2 teaspoon dried basil
1/2 teaspoon kosher salt
1/2 teaspoon course ground pepper
1 1/4 teaspoons minced garlic
3/4 cup dried bread crumbs
1 medium yellow onion, chopped
1 red bell pepper, chopped
1 jalapeno pepper, chopped (1 jalapeno is enough to add some flavor, and still not be noticed by the kids if you don't tell them it's in there. If it was just me eating it, I would probably use 1.5 - 2 jalapeno as I love spicy food)

Topping:
1/4 cup ketchup
2 tablespoons brown sugar

Directions:
Preheat oven to 350.
Mix all meatloaf ingredients together and place in glass pan. Shape into loaf and coat with the topping mix.
Bake for 60-75 minutes until 160 degrees in center.

If the sauce bothers you (lots of sugar) and you like spicy, I make mine by mixing 1 carb Heinz ketchup, salsa, and Worchestershire and hot sauce :eat: If you need it sweeter, you might try adding splenda, although it won't brown like sugar does.

I also use flaxseed as kind of a binder in place of the normal breadcrumbs. You could also use oats, but I'm normally using mine for a P+F meal these days.

From your recipe, you can also sub canned chipotle peppers for the jalapeno for a change up. Dump in more of the adobe sauce they are canned in to turn up the heat.

I've been on a meatloaf kick myself the last couple of weeks after having bought a bunch of grass fed ground beef.
