Anyone have any good marinades or chicken flavors they use that they really like? Plain chicken on the grill or pan is getting pretty old. Looking for some new flavors or healthy marinades.

I like curry powder and McCormick's Cajun Seasoning. Gives it some taste without adding tons of prep work.

In the summer we grill marinated breasts, but in the winter my wife bakes them. She takes whole oats, wheat germ and dried spices (use whatever spices you like on chicken) and grinds it all coarsely in a coffee grinder, dumps it out onto wax paper, coats the skinless breasts with a little olive oil, then keeps pressing and turning the chicken into the mixture until completely coated. Any leftover can go on top of the chicken. She then bakes it at 350 until just done. The coating keeps the chicken moist and tender.

Seems I'm the only one I know that loves hot food but can't stand frank's. Just hits my tastes the wrong way and it definitely isn't the "heat". I eat lots of things that are much hotter.

I mainly cook my chicken in the skillet in some olive oil. I like to add some chile powder, paprika, and pepper on the chicken while it is cooking. Then I pour a little bit of hot sauce (I like to use Franks Buffalo hot sauce) in a bowl and microwave it for about 20 seconds when the chicken is almost done.

Once the chicken is done I cut it into small pieces and mix it up in the bowl so it is covered in the hot sauce. Then with the seasoning and some olive oil left in the skillet, I like to throw in some frozen mixed veggies and frozen green beans until ready and add it to the bowl of chicken.

Then I top it off with 1/2 cup brown rice and mix it all up in the bowl and it is like a spicy stir fry. Very tasty, this is one of my favorite meals right now.

Here is the marinade that I used last week. Tasted great! A few more ingredients than I'd like to use for a weekly batch of chicken, but a nice change of pace:

INGREDIENTS

1/3 cup olive oil
3 tablespoons distilled white vinegar
1 1/2 tablespoons lime juice
1 tablespoon white sugar
1 teaspoon dried thyme leaves
3/4 teaspoon ground allspice
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/3 teaspoon ground cayenne pepper
1 scotch bonnet chile pepper, minced
1/4 cup minced green onions with tops
2 cloves garlic, minced

Just combine all of the above, throw in 4-6 chicken breasts and the mixture in a quart ziplock bag and let it sit in the fridge for up to 24 hours and grill. Good stuff :)
