The past 2 times I have done curls, I have gotten uncontrollable shakes/spasms in my legs. Pretty freaky. I have also gotten a much larger pump in my arms than normal.
The only thing I have changed recently is I am now taking an Animal Pak as my daily vitamin supplement. This is in addition to Dymatize Expand (CEE and NO2) that I have been taking for nearly 8 weeks. My other supplements are an EC stack before fasted LISS and ALA.
Any ideas what the hell this is? The only thing I can imagine is a reaction to the Expand and the Animal Pak.

You're only getting this since you started on the the supps you mention.

Are you sure you're not tensing your legs when you're struggling with a rep? I do this a frequently get cramps in my hip flexors/quads because of it.

What was your hydration like? Are you cutting really hard?
If you have good hydration and adequate Calories, then I would like to know what sort of leg, back, and core training you do.
By the way if this only happens during curls and not bent over rows, or standing military press, or any of several other exercises you may be doing, then it's not your supplements.

I am currently bulking. I drink nearly 2 gallons of water a day. I have not experienced this doing anything other than curls (hammer and bar, done on separate days). Strangest feeling in the world.

Well it's not your nutrition or supplements then, and it's not your hydration.
Sounds like "sewing machine leg" or something a lot like it, especially since it is only in the standing curls.
If that is the case, then it means that your weight is stuck on one part of your foot - probably the balls of your feet - through the whole set. If it is classic sewing machine leg you should be able to control the shaking by driving the heels down and consciously relaxing the gastrocnemius muscle in your calf.
When you do standing curls, you want to be strong enough in legs, back and core, that you can remain motionless and erect without significant effort. You should feel relaxed from the neck and shoulders down to your toes the whole time - even at your 1RM. You can practice this during your heavy rows or standing military press, etc., as well - where you stabilize a lot more weight than you can curl for reps. Keep your breathing easy and your legs and back rock steady during these exercises. If you can't, then you might need to work on big compounds for legs, back, and trunk.
Then, curls should no longer cause any overstressed legs, even when you go heavy.
