This has always been a hit and is easy to make. I'll post the nutritional breakdown later when I find it.
What you need:
1 can of chick peas (or garbanzo beans I think they are also called)
1 can of red kidney beans
2 zucchini, peeled n diced
1 big ol' tomato, diced
1/2 or quarter of an onion, depending on how much you like onion, diced
bit of parsley (chopped)
1/2 lemon
salt n pepper
olive oil (optional)
directions:
combine beans, zucchini, tomato in a big salad bowl. Add a bit of fresh chopped parsley. Squeeze half a lemon in. Add salt, pepper and olive oil to taste. Mix it all around, cover and leave in the fridge for a few hours to let all the goodness to mix together.
