I do baked sweet potato fries (or chips). Just slice them in the shape I want, lay them down on foil (I use an olive oil spray, just enough to do what I need it to do), spray a little of the olive oil spray over the top, and season however I want. I do them until they look done, usually around 20 minutes, I think.

I think you can buy a bottle that you can put olive oil (or any other oil) into that will spray it out like Pam.

I don't like sweet potatos...but when I was in Mississippi a couple years back helping with Katrina, I ordered sweet potato fries and they were simply delicious....just unreal...:D

I don't like baked sweet potatoes, as in a baked potato where you mash it all up and eat it. I love them as fries, though. And yes, you can do it with a spritzer bottle thing and olive oil, too.

Of course it adds some fat to the fries, but I spray a very small amount. I don't account for it in my food logging, for better or worse. It really is minimal, just enough to keep the sweet potatoes from sticking to the pan/foil, and just enough to keep the seasoning on. You barely need any.

It's still oil, so yeah, it does add fat.

If you look at the serving size, it will be something like 1/3 a second's spray = 0 calories or something similar.

If you can do 1/3 of a second of spray, you've got faster reflexes than I do :D I suspect they use such a short time because that allows them to list 0 calories on the label for people who do not think of these things. When the main ingredient is oil, it WILL have calories and the longer you spray, the more calories/fat you'll add.

However, it is probably a reasonable way to do as little oil as possible.

I do sweet potato chips where you slice the potatoes thin so they'll end up crispier. Just put them in a pan coated with cooking spray and back until crisp, using whatever spices you like (I do both salty/spicy and sweet with cinnamon/splenda). Flip chips about halfway though.

If you really want NO fat, you're going to have to bake the potatoes or make mashed potatoes I'd think.

My personal favorite way to eat sweet potatoes lately is to make mashed sweet potatoes with chipotle peppers.

Just mash them with 1 pepper from a can of chipotles in adobo sauce, and maybe some of the sauce to heat things up a bit more. Cook like regular mash potatoes...in my case I steam them until fork tender in my steamer then mash after putting in the chopped up pepper and a bit of salt. Usually I also include about 1/2 tbs of butter per serving, but that's optional.

Most people don't think of spicy with sweet potatoes, but I saw the above recipe on Alton Brown and I love it. Sweet, but with a spicy/smokey undertone to it.

:tu:

question...

im having trouble with the macro count of sweet potatoes fixed in a number of fashions. for example....

for 10.5 oz of sweet potatoes on fitday = 45g of carbs
(Sweetpotato, baked, peel not eaten, fat not added in cooking)

calorie king at 10.5oz of sweet potatoes = 60g of carbs
(Vegetables, Fresh: Sweet Potato, baked in skin, no salt added, edible portion)

doesnt seem right.

id like to get this clear as i enjoy the hell out of sweet potatoes.

is it because of the fiber count? i dont get it.

and if i were to make chips out of um... hell with this count thing... id be even more confused because no where is there a count for sweet potoe frys with very low fat. not that i know of.

might have to make a reward meal out of um or something.

I make hand cut sweet potato fries/chips at the moment. I am going out to buy a mandolin and maybe a fry cutter this weekend. I just toss em in a baggie with a light 0 calorie hot sauce and throw a little splenda on them. Take em out and bake them on no stick parchment paper for 20 minutes, turn 10 min in and they dont stick and taste amazing.

When i make mine, i put some groundnut (peanut) oil on a paper kitchen towel and rub the bottom of the baking tray, so its greasy but not swimming.

I then place my fries in the baking tray, and then drizzle (you could spray) more groundnut oil over the top, and crack some sea salt on top. I then dust the fries with a mixture of cayanne pepper and tumeric (about a ratio of 1:1, which i put into a dusting jar / herb / spice jar / small jar with a lid with small holes in). Put em in the oven, and bake till they look browned and done.

These taste awesome and go great with steak and a side salad, or chicken.

Fear not the oil, as healthy fats are hard to come by at the best of times. Ok, its not ideal, but its a good healthy well balanced meal. :)

krosspyder:

correct me if I'm wrong...but doesn't it look like calorie king is having you eat the skin where fitday is not?
(I would include the skin as part of the "edible portion" of a potato that was baked in it)

for 10.5 oz of sweet potatoes on fitday = 45g of carbs
(Sweetpotato, baked, peel not eaten, fat not added in cooking)

calorie king at 10.5oz of sweet potatoes = 60g of carbs
(Vegetables, Fresh: Sweet Potato, baked in skin, no salt added, edible portion)

I personally like the taste of the skin so I leave it on.

Whilst baking the sweet potato fries; is it necessary to flip them if they are placed on a rack over the pan?
