Hi

Tried this last nite and it was so yummy so if there is anyone out there who wants something different to do with chicken here you go.

You will need

chicken
garlic x2 cloves (more if you prefer)
lemon
rosemary
thyme
small amount of olive oil


grate some lemon rind into a bowl
peal and chop the garlic and add to the bowl
take a couple of the sprigs of rosemary and thyme add to the
bowl
add a small amount of olive oil and mix together. If you really like
lemon i added a squeeze to the mixture.

You can use whole chicken or chicken breast, i just adapted
the recipe to suit what i wanted.
If using breast put on a sheet of tin foil smear the mixture onto
the top of the chicken add a slice of lemon and more garlic if you like
wrap up and pop in the oven.

Top and tail some green beans pop in some boiling water serve and add some pine nuts and you have a nice meal.

Oh and cook the chicken until cooked through mine took about an hour.
