Hi, just wondering if there's any nutrional difference between raw and roasted nuts.

I've been eating raw cashew nuts for the fats but I've noticed that they're considerably pricier than packets of roasted.

Does anybody know if roasting them makes them a less suitable option nutrition-wise or is the difference merely in taste (and the added salt)?

I think roasting (dry) does have some impact, but not much. There is quite a bit on the web, but sifting the truth from myth isn't easy. There are a lot of people who will always say raw is better.

A quick Google shows up some links (raw vs roasted nuts). I think some of the fats might be affected and it sounds like possibly some of the B vitamins, but I don't think to any significant degree.
