SO here's the deal, I've been cutting and keeping track off nutrional value on foods and was wondering how bad / how important it is to keep sodium low. Based on most Nutritional Value pages, it would say that one should get about 2300 MG at most. What is your guys thoughts on this?

Don't worry too much about sodium. IMO, there is no need to track it. Extra sodium will result in weight gain but that weight is water, not fat. Sodium does not hinder fat loss. If you want to maintain optimal health, try to keep your sodium intake and your pottasium intake ratio close to 1:1.
