I developed this recipe when I was tempted by Atkins - I've learned better since then but I still use this as an early evening meal - it's very low in carbs and fat and very healthy. Also good for cooking for others - just add some potatoes and you've got an impressive meal on your hands!
Ingredients:
1 chicken breast
1 1/2 cups sliced green beans
1 small tin chooped tomatoes
1/2 clove fresh garlic
CHICKEN:
Slice one frsh chicken breast fillet lengthways (into two thinner fillets) and shallow fry in olive oil. Season as desired (I use OXO chicken stock)
GREEN BEANS:
I use frozen sliced beans, but fresh would work just as well. Steam for about 6 mins.
Crush 1/2 clove of garlic and shallow fry for a couple of minutes. Add the green beans to the pan and leave for another 2 minutes, tossing regularly.
Drain (most of) the juice from a tin of chopped tomatoes and add the tin to the pan. Mix the beans, garlic and tomato up, leave for 2 minutes and serve with the chicken.
