Thought I'd share a recipe that my mom first used to make tuna patties, but that I've adapted for either canned chicken or tuna.
1 12-13oz can Chicken or 2 cans of Tuna, drained
3/4 cup of Oats
1 stalk celery
2 egg whites
1/4 medium onion
Garlic powder to taste or Mrs. Dash...whatever floats your boat :)
Preheat the George Foreman or Grill
Dice the celery and onion
Toss the oats into a blender and blend 2-3 seconds...just long enough to make them a bit smaller
Open the chicken or tuna, drain and place into mixing bowl
Add the egg whites, oats, celery, onion and garlic/mrs dash to the chicken or tuna and stir until well mixed.
Form the mixture into four evenly sized balls and then press flat in the palm of your hand.
Place the patties onto the Foreman and cook for 3-4 minutes.
Nutritional Breakdown per pattie (Chicken)
145 Calories
20 g Protein
12 g Carbs
2 g Fat
These are perfect to make the night before and then toss into a ziplock and carry with you in a cooler. They are also a nice alternative to the breaded chicken patties for a quick sandwich.
I've seen my mom add maybe 1 TBLS of oil to the mixture, but the ones I make seem to hold together well and stay moist, so I skip the oil.
