If you like pancakes and you want to make something with eggs, how about protein pancakes?
1 egg
few egg whites
1/2 cup cottage cheese
1/2- 3/4 cup of oats
some Splenda

Blend well and fry with Pam

Excellent and very good for you!!

Just wanted to say that this was fantastic. I had with some low fat/sugar syrup. Tasted phenomenal. It was a little strange because I thought that there wasn't much batter there, but when I cooked it, it inflated for a mega-pancake.

The taste was a little strange, though that may have been from making one big pancake. It was kind of like french toast in pancake form.

I make few pancakes out of it, I think 3 (haven't made them in a while).

You can also make waffles if you have waffle maker :tu:

I made protein pancakes today. I used 3 egg whites, 4 tbsp of ground oats (I ground them in a food processor), 1/2 cup of cottage cheese, sweetener and 1 scoop of chocolate protein powder. They taste pretty good. If you beat the egg whites before adding them to the batter, the pancakes will turn out nice and fluffy.

I thought about adding protein powder.. but all I have is chocolate. Might try it today anyways :D

Left out the protein powder today and added one egg yolk, blueberries, rum essence and cinnamon. Major improvement!

Tried them again.

This time, I put a little milk and a scoop of my chocolate protein powder (only have chocolate otherwise it'd have been vanilla). I kind of overcooked them a little so they were not nearly as fluffy as the last ones. I'm not entirely sure if that was due to the extra heat or the protein powder.

Either way, they weren't too bad and they packed a whopping 70g of protein.
