I wanted to share a recipe that is so good I could hardly believe was healthy. (also want to make sure it here if i loose my copy :whistle:)
Chicken Francais:
8 (4-ounce) chicken breast halves
1/4 cup flour (any kind will do)
1 tbsp olive oil (total)
(Topping sauce)
2 tbsp butter
1/4 cup dry white wine
3 tbsp lemon juice
(Egg mix)
3/4 egg substitute (or 1-2 yolks and rest whites)
1/4 cup (1 ounce) parm cheese
1/4 cup parsley
1/4 white wine
2 tbsp lemon juice
1/4 tsp salt
1/8 tsp hot sauce/red pepper
3 cloves garlic
Mix up Egg Mix, put in dish for dipping breasts in.
Beat breasts fairly thin.
Dip cover in flour, then in egg mix.
Heat 1.5 tsp oil in pan coated with cooking spray on medium heat.
Cook 4 breasts at a time and 4 minutes on each side,
Wipe pan and repeat.
Make sauce by melting butter and mixing, then boil for a few seconds. Serve over chicken.
I serving is 1 breast and 2 tsp sauce
