Hi Guys-I just tried out a new recipe today involving vegetables which turned out to be pretty good ,so thought of sharing this with everyone.This is an indian dish but very healthy.
1 or 2 cups Mixed vegetables(broccoli,cauliflower,carrots,peas,beans )
2 pieces of garlic finely chopped
half onion chopped
one tomato chopped
some chillies chopped
if you want you could add some ginger
--Add 1-1.5 tsp of extra virign olive oil in a pan and let it heat for like 1 min.Then add the chopped onions and cook it till it become golden brown.Then add the garlic, chillies and tomatoes.Continue to mix it for like 5 min until the garlic and chllies are slightly cooked.Then add half tsp of chilli powder and half tsp of turmeric powder.Continue to mix for another 5 min.Finally add the vegetables and let them cook for like 15 min in medium heat.Add a dash of salt and or lemon.

This could be eaten with rice or wheat bread.In all it takes not more than 20-25 min max.You could add as many vegetables as you like.I also sometime add the salsa picante sauce.Makes it real spicy.

NP at all..I keep trying new things since I am vegetarian.I will post more quick fix recipes as I try them out..Hopefully this helps other people who are looking for vegetarian recipes.
