This is something I have concocted recently in order to be able to have a good fat/protein meal at work where I don't have a hob. All you need are the ingredients and a microwave.

Here is what I typically have:

2 whole eggs
100g chicken breast (grilled preferably but it's not that important)
1 tsp pesto (green or red is fine)

Break the eggs into a bowl and beat them. Add roughly half a cup of water and beat once more until the mixture is the same consistency.
Now add the pesto and beat some more so that the pesto "bits" are spread throughout the egg mixture.
Season if you want (thyme works well), beat again and throw your chicken breast in (chop it up first!).

Microwave for 3.5 mins, or until the desired texture is achieved.

I have found that lean bacon, peppers, ham and various other things that you would typically find in an omelette also work well in this (although cheese just made the office stink :lol: ). It's not nearly as good as a proper omelette, but if you're short on equipment this is a good and easy protien/fat meal. :)
