yea ive accepted the fact that i should keep a log of what i eat, since i essentially do it in my head, which i shouldnt be doing. i mean ive been losing weight, but i want to keep a log anyway. anyhoo, what in your guys' opinions would be the best amount of caloric intake for someone like me, and what percernt of it should be protein, carbs, and fats. ok so keep in mind i am 255 lbs, 6'3, am looking to both lose weight and gain muscle, alternate between lifting weights and hiit days, and only have one resting day on sunday. so how many calories would be a good starting off point for someone like me?

Your TDEE (Google it) minus 500-700 calories, 50/30/20.

There are TONS of sites that will give you a general range for your weight of # of calories you should be eating daily; like said above, subtract 500 or so from that, you're good to go. As far as keeping track goes, if you don't have it down on paper, there's no way you're going to remember a week from that day what you ate. Use fitday.com, it's so simple and gives you your breakdown for %'s of p/f/c. That way, you can track your progress and alter your diet down the road when you hit a block. Good luck!!
