Tiramisu is my favorite dessert, but as we all know it's pretty awful from a nutritional standpoint. In an attempt to come up with a healthier alternative, I tried the following:

250 g of creamy LF cottage cheese
fat free, low carb ready-made vanilla pudding (I don't get Jell-O here, so I had to use something else - depending on what you use, you would have to adjust the nutritional data)
14 whole grain ladyfingers
1 TSP sugar
1 cup of cold coffee
rum flavor
10 g gelatin powder

I mixed the CC with the pudding, the sugar, the rum flavor and the gelatin powder and added a little cold water. Then I put half the ladyfingers in a flat, rectangular tupperware container, and soaked them in cold coffee. Then I spooned half the cream on to the layer of ladyfingers, added another layer of cookies, drizzled some more coffee over them, and then added another layer of cream. I put the whole thing in the fridge for about 3 hours - I guess it could stand to stay in there a little longer. Unfortunately, I had no unsweetened cocoa powder, but obviously that would then go on top.

It was, obviously, nothing like the real thing, but pretty tasty nonetheless. One could substitute low fat mascarpone for half of the cottage cheese, which might improve the taste.
