Here's another one. I hope you like it.


Grilled Chipotle Pork Tenderloin

2 pork tenderloins about 10 oz each
3-4 canned chipotle chilies in adobo sauce, seeded
2 tablespoons lime juice
3 tablespoons honey
2 large garlic cloves
1 tablespoon soy sauce
2 teaspoons ground cumin
1/4 cup chopped fresh cilantro, plus sprigs for garnish

Cut each tenderloin half lengthwise.

Combine chipotle chiles, lime juice, honey, garlic, soy sauce, and cumin. Blend until smooth. Stir in the cilantro. Transfer half of the mixture into a non aluminum bowl and marinate covered and refridgerated 4-6 hours or overnight.

Grill or broil tenderloins 6-8 inches from coals or heating element. Cook until seared on the first side about 4-5 minutes. Turn over and spoon remaining chile mixture on top of pieces. Tent with aluminum foil and cook until no longer pink about 5 minutes. Remove from heat and let rest for 5-10 minutes.
