I am posting this for 2 reasons.
1) I feel I should make a more positive contribution to the forum other than making bad jokes and puns ;)
2) I can't stand seeing 'Chocolate cake' on the forum index all the damn time. Damn you whoever it was that posted it!
This is a healthy meal that I have been making for quite some time. It's not quite SGX-friendly so I'm not having it at the moment. I don't have the calories/protein/carbs/fat breakdown but I'm sure you can work it out - all depends how much stuff you use I spose!
This serves 2.
1/2 onion
1 pepper (yellow tastes best in this but green or red are OK as well)
As many veggies as you like - I prefer 1 carrot but you can use whatever you like
1 tin tuna
3 tbsp low fat mayo
1 tin cream of mushroom soup
Cheese of some description
4oz pasta
You will want to use a saucepan for this and not a frying pan.
Gently fry the onion until brown. Throw in the pepper and other veggies and fry these for a few minutes to make them nice and soft.
Next, drain your tuna and throw the whole lot in to the pan. Stir it in with the veggies and mix it up.
Add the mayo and stir. It gets all pasty at this point as you can imagine.
Now add the mushroom soup, season and stir. Leave to simmer gently (covered).
Now start cooking your pasta - this should take 10-15 minutes depending on what kind you have.
Pre-heat the oven to a medium temp (I use gas mark 5 - dunno what the equivalent C/F temp is).
When the pasta is done, drain it and pour it into the tuna/veggie slop. Stir well and leave it for a few more minutes.
Pour all of the pasta/tuna slop into a pyrex dish and sprinkle grated cheese on the top. Of course you shouldn't use too much if you want to keep that fat level down
Whack the dish in the oven for 15 minutes.
The tuna/pasta should be covered in a lovely golden brown cheese layer and it will taste awesome. Serve with green salad and wolf down :eat:
